Abstract
|
[Objective] To establish a headspace gas chromatography mass spectrometry method for analysis of short-chain fatty acids (SCFAs) of fried medicated leaven. [Methods] Headspace gas chromatography mass spectrometry (HS-GC/MS) was applied for this study. Fried medicated leaven samples were sealed in the headspace bottle for analysis. [Results] By retrieving the National Institute of Standards and Technology (NIST) library, seven SCFAs was identified, including acetic acid, propionic acid, isobutyric acid, butyric acid, isovaleric acid, valeric acid and caproic acid. [Conclusion] The method could be used for rapid analysis of SCFAs of fried medicated leaven, which could establish the foundation for quality control of fried medicated leaven. |
